Y is for the former country of Yugoslavia, where the largely unsophisticated

peasant cooking is rich in healthy carbohydrates. This recipe for pizza is one which their Italian neighbours might disown, as it uses two raising agents - baking powder and yeast. Nevertheless, children love it.

PIZZA

Serves 4

1lb self-raising flour

1/2 pint milk

1 packet quick yeast

1/2 bottle tomato ketchup, or home-made tomato sauce

1 teaspoon salt

4oz cheese, sliced

slices of red or green peppers*

dried oregano, olive oil

Slightly warm the milk and mix in a bowl with the flour, yeast and salt. On a floured board, make a ball of dough and knead well. Place in a covered bowl and leave in a warm place for 30 minutes to rise.

Heat oven to very hot (450F/230C/Gas 8). Oil a flat baking tray and with your hands press out the dough on to it, flattening it as you go, using your thumbs to make a raised ridge around the edges.

Spread tomato sauce across the surface, then the slices of cheese, then the sliced peppers, and sprinkle with oregano (or dried basil or marjoram). Dribble with olive oil. Bake in hot oven for 20 minutes until sizzling.

*Or add any topping of your choice, such as ham, tuna, salami or peas.
