Brown sugar

Billington's fly the flag for unrefined sugars with a large range of sticky, sweet granules, from the palest gold to deep-brown fudgy molasses sugar. The latest sugar to be added to their range is organic, the colour of demerara with a more pronounced treacley scent.

Evidently being organic is not enough to ensure ethical production. Billington's claims to have one over on some other organic sugars in being produced without the use of sulphuric acid and sodium hydroxide. It is made from pressing out, cleaning and crystallising the juice from sugar cane - escaping the additional processes for refining brown and white sugars. Available from Sainsbury's and selected healthfood and wholefood stores at pounds 1.29 for 500g.

Fish food

If you've been patiently counting off the days of August until you can have your first native oyster of the season, then you could do worse than take a trip to Hay's Galleria on Sunday 1 September for the annual Oyster and Seafood Fair. It actually starts on the Friday, but you'll have to make do with Pacific oysters for the first two days. There will be a wide range of fish and seafood for sale, cooked and raw, as well as a Champagne and Oyster bar, and a Pimms bar Hay's Galleria, London Bridge City, Tooley St, London SE1.
