Fish – whichever way it comes. I’ve been fishing all my life and nothing tastes better to me than fresh pan-fried snapper seasoned with salt – and I add a little finely grated cacao and chilli.

At the moment, it’s Casa Moro, by Sam & Sam Clark – Spanish cooking with Moroccan influence.

What's In My Fridge?

A lot of cream for making truffles and a multitude of vegetables. Truffles are the best way to taste the flavour in cacao and vegetables represent the majority of whatever I'm cooking.
