1: El Bulli, Spain
Best dish: None. Is said to be so inventive that it "transcends the limitation of signature dish".
Critics say: "A visit to El Bulli requires a willingness to suspend the reality that eating is a basic fundamental of life.
Ferran Adria does not favour the concept of comfort eating. His tasting menus are assault courses for taste buds."
Located down a magnificent driveway in Roses, on the Costa Brava, about 160km north of Barcelona, the restaurant's head chef, Ferran Adria, is considered something of a living legend. Don't even think of dropping in on the off-chance, bookings open and close on one day in mid-January. The restaurant is open from April to September - for the rest of the year the chefs are said to be devising new recipes. If you are lucky enough to get a spot you will work through 25 dishes, which could be codfish foam or spherical potato gnocchi with consommé of roasted potatoes.
2: The Fat Duck, UK
Best dish: Snail porridge
Critics say: "Insanely great food"
In Bray, Berkshire, it was opened in 1995 by Heston Blumenthal, a former salesman who discovered a passion for food on holiday in France and taught himself to cook. He is the UK's foremost exponent of "molecular gastronomy", renowned for unusual combinations such as sardines on toast sorbet, egg and bacon ice cream, or parsnip cereal.
3: Pierre Gagnaire, France
Best dish: Scallops in green apple soup
Critics say: "One of the most original and artistic chefs working anywhere."
The restaurant, in Rue de Balzac, Paris, is named after its proprietor. The dining room is nothing special. The artistry is in the menu - range-raised capon, stuffed with lemony almond paste, spring onion marmalade and cherries, or the sea bass served with smoked tomato sorbet.
4: French Laundry, US
Best dish: Oysters

Critics say: "The best restaurant in the US"
This is a restaurant built in a former saloon at Yountville, in the Napa Valley, California.The owner/ chef, Thomas Keller, who was taught to cook by his mother, bought it in 1994. Its food is mostly contemporary American, with a hint of French.
5: Tetsuya, Australia
Best dish: Confit of ocean trout with ocean trout roe
Critics say: "A magical experience."
The chef, Tetsuya Wakuda, arrived in Sydney from Japan, in 1982, began as a kitchen hand, and worked his way up.
6: Bras, France
Best dish: Molten chocolate cake.
Critics say: "Inspired and inspiring."
Located in the southern Auvergne region. The chef, Michel Bras, says all his influences are traditional and local.
7: Mugaritz, Spain
Best dish: Poached egg in truffled chicken gelee.
Critics say: "The future of Spanish cooking."
Located at San Sebastien, its chef, Andoni Aduriz, devoted two years to the study of foie gras.
8: Le Louis XV, Monte Carlo
Best dish: Praline croustillant
Critics say: "Exudes opulence"
The men who run Monaco's economy brought in Parisian chef Alain Ducasse to run a haven of luxury that would draw punters to Monte Carlo.
9: Per Se, US
Best dish: "Oyster and pearls"
Critics say: "Time Warner Centre's crown jewel."
The US's top chef, Thomas Keller, has two establishments in the top 10. This one opened in New York, near Central Park, in 2004, and was an immediate hit.
10: Arzak, Spain
Best dish: Mille feuille au caramel d'anguille fumee au foie gras
Critics say: "A sire of modern Spanish cuisine, with its derring-do, its exuberant playfulness". Juan Mari Arzak and daughter, Elena serve traditional Basque food.
11: El Celler de Can Roca, Spain
Best dish: Lobster, thick bisque sauce, mint foam and chocolate gem.
Critics say: "The best restaurant in Catalonia."
12: Gambero Rosso, Italy
Best dish: Shrimp with chickpea puree
Critics say: "Devastating charm"
A little diner in San Vincenzo, with a fabulous seaside view.
13: L'Atelier de Joel Robuchon, France
Best dish: Caramelised quail glazed with shallot-perfumed sauce.
Critics say: "A side of Paris that even prim T S Eliot would succumb to".
14: Hof van Cleve, Belgium
Best dish: Seasonal.
Critics say: "Impeccable food"
Rural farmstead decorated with work from cutting-edge Flemish artists.
15: Noma, Denmark
Best dish: Musk ox and caramelised apple, served with beetroot and woodruff
Critics say: "An ethereal interpretation of the otherwise quite rugged cuisine of the North Atlantic."
16: Le Calandre, Italy
Best dish: Risotto with saffron, red pepper and licorice.
Critics say: "I can't imagine there is a better restaurant in all of Italy."
