In New York, they say "Have you had the gnudi?", and you know exactly what they are talking about: the newly famous, soft, rich light-as-air sheep's milk ricotta dumplings either topped with fried sage, brown butter and parmesan, or a vibrant green pesto oil, at the Spotted Pig.
