1 teaspoon vegetable oil
1/2 small onion, finely chopped
1/2 small tomato, finely chopped
1/2 green chilli, seeded and sliced
2 eggs, beaten with pinch salt
1 tablespoon chopped coriander

Heat oil in a small non-stick pan. Beat ingredients lightly, pour in. Cook on moderate heat, stirring for 30 seconds until it sets. When underside is browned, turn and cook for a minute or so. Fold in half and serve with toast and ketchup.
