Sweet potatoes are a versatile root vegetable and not actually a member of the potato family. They are native to America and have a wide variety of uses from purée to crisps. This dish will accompany grilled and roasted meats and fish or can be served as a snack with drinks.
1-1.2kg sweet potatoes (pink or white)
3tbsp olive oil
1tbsp chopped fresh rosemary
2-3tbsp freshly grated Parmesan
Salt and freshly ground black pepper
Preheat the oven to 220°C/430°F/Gas mark 7. Scrub the sweet potatoes if they are dirty and cut them into 4-8 wedges depending on their size. Heat a roasting tray in the oven with the olive oil, season the sweet potato wedges with salt and freshly ground black pepper and roast for about 30 minutes turning them occasionally. Add the rosemary and Parmesan and roast for another 20-30 minutes, again stirring every so often. If they are browning too much turn the oven down. f Reuse content
