Corn is delicious and easy to cook on a barbecue. Its husk gives it a natural protection and the barbecue gives the corn a smokiness that really suits it. Once cooked, all that is needed is a knob of butter and plenty of freshly ground black pepper.

4 ears of corn with husks on
4tbsp extra-virgin olive oil

First get your grill or barbecue going. Allow the coals or wood to be cooking maturely so the first aggressive heat has died down and you are left with a steady, strong, consistent heat. Brush the outer husk with a little olive oil and lay the corn on the grill. Cook for half an hour. Turn every 5 minutes or so to ensure the corn cooks evenly.
