Tapioca chips, the next gluten-free snack trend

Gluten free products are becoming more in demand and similar to bubble tea made from tapioca pearls, cassava (also referred to as tapioca or yucca) chips may be the latest gluten free snack trend to gain international appeal.
The 2010 Summer Fancy Food Show ended on June 29 and some of the 180,000 new products introduced at the show are beginning to hit shelves and sites.
On July 5, the trend spotter site Coolhunting.com explained cassava "...has more fiber and potassium than its spud counterpart, making a healthier and increasingly popular alternative in several foods."
Cassava is a mainstay in numerous sub-Sharan African and South American diets. Cassava chips, similar to plantain chips, have been popular in Cuba for years. Here are three new brands to look out for:
