Sir: Your front-page story about Michel Roux cooking in the Kremlin ('Kremlin chefs row with Roux at Yeltsin's banquet', 15 April) quoted him as saying it was the first time since the Tsars that a chef outside the country had worked in the Kremlin.

In around 1987, John Folse, chief proprietor of Lafitte's Landing in Louisiana, cooked up a cajun storm in the kitchens of the Kremlin (having previously taken his cooking pots to the Great Wall of China). He subsequently hosted a tour of the US by a group of Soviet chefs.
