A company has shared the recipe for a Millie’s Cookies-style giant iced biscuit so fans can make it at home during lockdown.

The Big Bakes, a pop-up events business, posted the recipe on its Instagram account, along with a step-by-step tutorial.

All bakers need to make their own super-size piece of confectionary is: two eggs; 1 tsp salt; 1 tsp vanilla; 390g plain flour; 1 tsp baking soda (not powder); 235g unsalted butter; 340g chocolate chips; 110g granulated sugar; 255g light brown sugar; 100g butter; 150g icing sugar; and 25g cocoa powder.

Equipment-wise, you need a hand mixer or whisk, a mixing bowl, spatula, teaspoon, cling film, scales, large baking tray, baking parchment and a piping bag.

The unsalted butter and granulated sugar are beaten together until light, before the eggs are beaten into the mixture one at a time. The vanilla is added, followed by the flour, baking soda and salt.

Finally, add in the chocolate chips.

The cookie dough is then ready to be separated into two balls and individually wrapped in cling film – they can be frozen and used at a later date if preferred.

Otherwise, put in them in the fridge to chill for two hours before cooking.

Weigh out 400g of dough and roll it into a ball, before popping onto a large baking tray lined with baking parchment and squashing it down a little so it’s a “puck shape”, rather than a sphere.

The cookie dough is then baked in the oven at 160 degrees for 30-35 minutes, or until golden brown.

The resulting giant cookie has to be left to cool for an hour before it can be iced.

The butter, icing sugar and cocoa powder are mixed together to make chocolate buttercream, which can then be piped in a design of your choice.

“This looks amazing!” wrote one Instagram user, while another commented, “Next on the list.”

It’s not the only recipe to be shared during lockdown.

Marks and Spencer’s recently shared a new recipe for crispy cakes made from its signature Percy Pig gummy sweets, and Pizza Express has delighted fans by sharing the recipe for its iconic dough balls and Leggara Padana pizza.
