Three prison officers were seriously injured in the attack, allegedly by Manchester bomb plotter Hashem Abedi, using hot oil and homemade weapons.
The attack came on the same weekend as a separate incident at HMP Whitemoor, where a prisoner was killed.
The former officer says those incidents are “just the tip of the iceberg” and many attacks go unreported.
The Ministry of Justice has launched an independent review into the HMP Frankland attack and suspended prisoner access to kitchens in separation and close supervision units.
