BEST SEMI-SOFT CHEESE

Wigmore's Sheep's Cheese from Anne Wigmore, Reading, Berks. Firm, velvety texture, with an orange leathery rind. Tel: 0734 884 564.

BEST SOFT WHITE RIND CHEESE

Jouvenet Hard Goat's Cheese from Gedi Enterprises, Barnet, north London. Soft and runny, with a gentle, subtle flavour and a hint of bite. Like a little goat's milk Camembert. Tel: 081-449 0695.

BEST NEW CHEESE

Finn, from Neal's Yard Creamery, Sevenoaks, Kent. Very creamy Camembert-style cheese, made from cow's milk. Tel: 0732 461 020.

BEST CHEDDAR CHEESE

Chewton Extra Mature Cheddar from Chewton Dairy Farms, Chewton, Mendip, Bath, Avon. Properly made Cheddar - dense, rich, like drinking a marvellous old Burgundy as subtle flavours keep emerging. Tel: 0761 241666.

BEST HARD TERRITORIAL

Tuxford and Tebbut's Red Leicester from Melton Mowbray, Leicestershire. Frequently under-estimated, frequently poorly made, unusual to find such a superb example. Tel: 0664 500 555.

BEST HARD-PRESSED CHEESE

Berkswell Sheep's Cheese from Ram Hall Dairy, Coventry, West Midlands. Orange tinged rind, lovely, sweet, creamy and rich with a slightly smoky flavour. Tel: 0676 532 203.

BEST BLUE CHEESE

Tuxford and Tebbutt's Mature Blue Stilton from Melton Mowbray, Leicestershire. Rich, strong, smooth, and very well made. Tel: 0664 500 555.

BEST SPECIALITY CHEESE

Butlers Smoked Lancashire from Preston. Smoked cheese is often a gimmick or a way of doing something for a below average quality cheese. This one is a wonderful exception.

BEST SCOTTISH CHEESE

Galloway Mature from the Galloway Cheese Company (marketed as McLelland Mature). Faced with the prospect of the demise of the Milk Marketing Board next month and higher prices for milk for cheesemaking, this company has gone into voluntary liquidation. A fine Scottish cheese will vanish unless someone comes to the rescue. Tel: 041 552 2962.

BEST VEGETARIAN CHEESE

J K Longman's Traditional Mature Cheddar from Ditcheat, Somerset. Some 200 cheeses on show were vegetarian but didn't advertise the fact, which shows how far vegetarian cheeses have come. Tel: 0749 860 213.
