A project co-ordinated by scientists at Unilever is investigating the way enzymes in fruit and vegetables change during packaging and storage, and how this affects flavour.

The study will examine tomatoes, french beans, parsley and potatoes. The aim is to find ways of deactivating enzymes which affect quality.
