Organised by the late singer's son Jordan and his musical compadre Jorge Calderon, Enjoy Every Sandwich is a lesson in how to pay tribute to a great songwriter. Any compilation that includes tracks by Dylan and Springsteen, and creditable offerings from two distinctive Hollywood talents (Adam Sandler, Billy Bob Thornton) is aiming high. The peculiar spirit Zevon brought to his songs is nowhere better expressed than in Calderon's heartbreaking "Keep Me in Your Heart", where Jennifer Warnes's measured ululations cut right to the quick of the song. Don Henley brings a suitably grizzled presence to the wounded nobility of "Searching For a Heart", and Steve Earle captures the scarred plaint of "Reconsider Me". But if ever a singer were matched with a song, it's Dylan's live version of "Mutineer", where his weatherbeaten charisma lights up the anthem like a beacon.
