Stir-fried scallops with mushrooms and Thai basil

4 cleaned scallops
50g/11/2oz assorted mushrooms, such as pied d'bleu, capes, shiitake, trimmed and brushed clean
3 cloves garlic
1 tablespoon ginger
A pinch each salt and white pepper
A little oil
1/2 cup chicken stock
1 tablespoon light soy sauce
A pinch of white sugar
Handful Thai basil

Make a paste by pounding the garlic with the ginger, salt and white pepper. Heat a wok and add the oil. Add the paste, scallops and mushrooms. Stir-fry until just cooked. Pour In the stock and season with the soy and sugar. Simmer for a few moments and add the thai basil before serving with rice.
