The Cotswolds is not only one of the most beautiful parts of England, but it is also a culinary hot spot with some of the best dining in the country.

In the kitchens of Bibury Court Hotel, Bibury, Cirencester (01285 740337; biburycourt.com), some of the South-west's best produce is transformed into delicious modern British dishes, such as crisp Bibury trout and herb gnocchi.

David Everitt-Matthias's hedgerow haute cuisine has won two Michelin stars for Le Champignon Sauvage, 24-26 Suffolk Road, Cheltenham (01242 573449; lechampignon sauvage.co.uk), with dishes such as cannelloni of kid, goat's milk curd and land cress purée.

Heston Blumenthal-trained chef Emily Watkins has garnered rave reviews for her refined local and seasonal gastropub cooking at The Kingham Plough, Kingham, Chipping Norton (01608 658327; thekinghamplough.co.uk), where you might find mushroom stuffed leg of wild rabbit with Jerusalem artichoke purée.

Chef Michael Bedford worked for Gary Rhodes before opening The Chef's Table Bistro, 49 Long Street, Tetbury (01666 504466; troublehouse.co.uk), where the daily changing menu might include homemade pork faggots with parsnip purée.

A Regency stone exterior conceals the contemporary interior design of Juliana's, Cotswold House Hotel, The Square, Chipping Campden (01386 840330; cotswoldhouse.com), where award-winning chef Steve Love daringly combines fillet of beef and braised ox cheek with langoustines, parsley root and coffee brittle.
