These cockle-warming and blood-cooling cocktails will fill you with Christmas spirit, and the Passionart will even do it without alcohol. The pyrotechnic team of award-winning bartenders at London's Atlantic Bar share some of their hottest recipes with us, and concoct the Spiced Blazer especially for `The Independent Magazine'.

Spiced Blazer

2 shots brandy

1 sugar cube

1 slice lemon

half a stick cinnamon

7 cloves

Pour all ingredients into a warmed brandy glass, set alight by holding a match over the tilted glass, then carefully turn it by the base for around 30 seconds (see left). Extinguish with a damp tea towel. Allow the glass to cool before drinking.

Madroska

2 shots Russian vodka

1 shot orange juice

2 shots cranberry juice

2 shots apple juice

Pour each over ice into a highball glass. Garnish with a slice of starfruit on the rim, with a halved strawberry either side.

Honey Berry Sour

1.5 shots Krupnick vodka

half a shot Chambord liqueur

1 shot lemon juice

dash sugar syrup

dash egg white

Shake vigorously and serve straight up in a Martini glass or on the rocks in a tumbler. Garnish with three fresh raspberries.

Passionart

1 shot passion fruit juice

1.5 shot strawberry puree

3 shots apple juice

2 shots orange juice

dash lime juice

dash gomme syrup

Shake, and serve in a long glass over ice. Garnish with a slice of starfruit and halved strawberry either side.
