Relax: there's no need to clock- watch to make sure you get the last train home when you dine at a restaurant with rooms. Linger over coffee and calvados in the bar before making the delightfully short journey to bed.

Choose between a room with a mountain or sea view at Auberge du Vieux Chateau, Place du Panorama, Cabris (00 33 4 93 60 50 12; aubergeduvieuxchateau. com). With Cannes Bay just 15 minutes away, it is no surprise to find on the menu Mediterranean-influenced dishes such as fish roasted in olive oil and stuffed with vegetables and served with vinaigrette.

Learn how to make a classic Viennese Sachertorte with chef James Overbaugh of Chateau du Sureau, 48688 Victoria Lane, Oakhurst, Yosemite National Park (00 1 559 683 6800; chateaudusureau. com). Then dine on a herb-crusted rack of lamb with wild mushroom latke in the opulent restaurant dining room.
