How to make Farmdrop's kimchi fried rice

Kimchi fried rice

Time: 45 mins

240g wild rice
1 onion, chopped
1 chilli, chopped
2 cloves garlic, chopped
2 inches of ginger, peeled and finely chopped
2 tbsp kimchi
2 tbsp soya sauce
1 tbsp sesame oil
1 red pepper, sliced
2 rainbow carrots, peeled into ribbons
2 spring onions, sliced
1 tbsp sesame seeds
4 eggs

Dairy free

Put a pan of salted water on to boil. Add the rice and cook for 35-40 minutes, until tender.

Add a glug of oil to a frying pan and fry the onion until soft.

Add the garlic, chilli, ginger and red pepper. Fry for 5 minutes. The pepper should still have bite.

When the rice is cooked, drain it well then stir through the onion and pepper mix, as well as the kimchi, soya sauce and sesame oil. Taste and season with more soya and sesame if you prefer.

Fry the eggs in a little oil in the frying pan.

Serve the kimchi rice in a bowl, topped with the fried egg, carrot ribbons, spring onions and sesame seeds.
