Unusually red tomatoes which could help to protect against cancer and heart disease have been developed by scientists at London University. The tomatoes have been genetically engineered to contain high levels of carotenoids. These are substances that mop up free radicals, compounds inside cells which can damage DNA, and they also make the tomatoes redder than usual. The researchers, from the School of Biological Sciences, are hoping to do the same with other vegetables, such as carrots and peppers.
