Genius Foods, a gluten-free bread and cakes company set up in Edinburgh in 2009 by Lucinda Bruce-Gardyne, a food writer and chef, is to go stateside.

It has teamed up with Glutino Food Group, a US manufacturer and distributor, and will sell its range in Target, Safeway, Save Mart and other chains. Genius's chief executive Gervase Cottam says the US market has huge potential.
