After a first body was pulled from the rubble, firefighters spent hours looking for a second one, guided by other workers on the construction site.
Some called the missing worker's mobile phone in an effort to locate him, until the body was finally found, news reports said.
Five other workers were injured in the incident which occurred at the Hotel Tivoli in the El Arenal area of Palma, capital of the popular tourist island of Mallorca.
The hotel was built in 1960 but closed several years ago for reconstruction. It was expected to reopen this coming summer.
The cause of the collapse was not immediately known.
