Sally Grainger is not the only trained chef to write on ancient food ("The real Caesar salad", Review, 28 July). Shaun Hill of The Merchant House in Ludlow, an honorary research fellow in this department since 1991, was there well ahead of her. You allude to Archestratus without mentioning the standard work on that writer co-authored by Shaun Hill, Archestratus: The Life of Luxury.
