Salmon en papillote with sesame and ginger

Serves 2

Prep: 10 minutes
Cook: 15 minutes

1 tbsp chopped ginger 
1 tsp crushed garlic
2 tbsp soy sauce 
2 tbsp Chinese rice wine vinegar
1 tsp toasted sesame oil
1 medium carrot, cut into thin strips
1 medium courgette, cut into thin strips
4 spring onions, thinly sliced
2 skinless salmon fillets about 200 g each
2 tsp toasted sesame seeds

Preheat the oven to 200C, gas mark 6. In a small bowl, mix together the ginger, garlic, soy sauce, rice wine vinegar and sesame oil.

Place 2 x 23 cm squares of baking paper on a large baking sheet and divide the vegetables between them. Place a piece of salmon on top of the vegetables and spoon over the ginger and soy sauce mixture. Sprinkle the sesame seeds over the salmon.

Fold over the paper to seal and cook the parcels for 12-15 minutes. Place on a plate, carefully open up the parcel and serve with steamed rice or noodles.
