Cuttlefish and orzo salad

Serves 4

Paprika and sherry vinegar mayonnaise

This is lovely as part of a mezze plate, with raw vegetables or warm flatbread, grilled aubergines and peppers. It also goes well with barbecued chicken, chorizo or even folded through a plate of warm clams.

Chilled beetroot soup with crème fraîche

Sweet and sharp, this beautifully coloured soup is tempered by a final teaspoon of crème fraîche placed casually in the centre just before serving. Serve well chilled, as it tastes fresher that way.

Barbecued salmon with soused cucumbers

Dining out: Mark Hix creates an al fresco feast

It's been a cracking spring, and let's hope that it stays that way so that we can all enjoy some al fresco eating this summer. The following recipes would be perfect eaten outside during a sunny weekend afternoon or on a hot summer's evening – just keep the barbecue to hand.

Eggs Florentine

Eggs Florentine

Serves 4

Both this and eggs Benedict are popular throughout the day, not just for breakfast or brunch, no doubt because of the perfect combination of ingredients – poached egg and spinach or ham on an English muffin, topped with buttery hollandaise. Our muffins are handmade by Flour Station, which you will find at a lot of farmers’ markets.
